Bandito’s Burritos: Mexican after midnight
My Polish friend Sebastian who is actually Polish-Canadian, but grew up in such a steadfastly Polish neighborhood of Windsor, Ontario that he speaks with an unyielding accent and frequently has difficulty thinking of just the right word in English has lived and worked in the US for long enough to become entirely comfortable with our culture and habits. There is one thing, though, that continually amuses Sebastian and reminds him of his foreignness: he can’t get his head around our Great American Obsession with Mexican food.
Of course Sebastian enjoys Mexican food, but he finds it bizarre that one culture (specifically, the American descendents of European immigrants) can hunger so intensely for another culture’s cuisine. Mexican food is, for a vast many non-Latino Americans, the ultimate comfort food which does seem strange when “comfort food” by nature is usually the simple, traditional foods of one’s upbringing. How and why Mexican cookery has made such an impact on the American appetite is inconsequential for now it only matters that we crave it. Luckily, Bandito’s Burritos has recently extended their operating hours on the weekends, bringing a late-night menu to Bellingham’s late-night crowd.
A local favorite for 15 years, Bandito’s covers all the bases: offering tacos, quesadillas, enchiladas and even yamchiladas, it’s still their hefty, gut-busting burritos that reign as the key draw. With a colorful salsa bar to embellish their goods boasting varieties such as Hawaiian Ginger and Sinister Cilantro Bandito’s promises that the combination of flour tortilla, rice and beans won’t ever grow stale.
The new late-night menu, a drastic abbreviation of the standard menu, should help to keep the West end of Downtown sated during the midnight hours. Whether sudden crisis or prolonged stress have you hankering for a soothing pile of beans and cheese, or a full-on craving for a bit of South of the border punch threatens to cripple your night out, Bandito’s is now open until 2 a.m. on Thursday, Friday and Saturday nights. Two choices of burritos chicken or vegan are available, with sour cream and guacamole on the side. An order of chips goes for a buck and that illustrious salsa bar will stay stocked until they lock the doors.
